For the Dough (If Making Homemade):

unsalted butter, softened

For the Filling:

lb ground beef or shredded chicken

medium onion, finely chopped

red bell pepper, diced

boiled eggs, chopped

green olives, chopped

oregano

Instructions
Prepare the Dough (If Making from Scratch):
Mix the Dough Ingredients:
In a large bowl, combine flour and salt. Add softened butter and mix until crumbly.
Add the Egg & Water:
Add the egg and warm water, kneading until a smooth dough forms.
Chill the Dough:
Wrap in plastic and refrigerate for at least 30 minutes.
Prepare the Filling:
Sauté the Vegetables:
In a skillet, heat olive oil over medium heat. Add chopped onions and bell peppers. Cook until softened.
Cook the Meat:
Add ground beef or shredded chicken. Stir in cumin, paprika, oregano, salt, and pepper. Cook until browned and well-seasoned.
Add Olives & Eggs:
Stir in chopped boiled eggs and olives. Remove from heat and let cool.
Assemble the Empanadas:
Roll Out the Dough:
On a floured surface, roll out the dough and cut into circles (about 5 inches in diameter).
Fill the Empanadas:
Place 1-2 tablespoons of filling in the center of each dough circle.
Seal the Edges:
Fold in half and press the edges with a fork or twist them to create a decorative seal.
Bake the Empanadas:
Preheat the Oven:
Set oven to 375°F (190°C).
Brush with Egg Wash:
Lightly brush each empanada with the beaten egg for a golden crust.
Bake:
Place empanadas on a lined baking sheet and bake for 25-30 minutes or until golden brown.
Serve and Enjoy:
Cool Slightly:
Let them rest for a few minutes before serving.
Enjoy Warm:
Serve with chimichurri sauce, salsa, or a fresh salad.
