Argentinian Empanadas

For the Dough (If Making Homemade):

  • 3 cups all-purpose flour
  • ½ cup unsalted butter, softened
  • 1 teaspoon salt
  • 1 egg
  • ½ cup warm water

For the Filling:

  • 1 lb ground beef or shredded chicken
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 2 boiled eggs, chopped
  • ½ cup green olives, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon oregano
  • 1 tablespoon olive oil

For Sealing & Baking:

  • 1 egg, beaten (for egg wash)

Instructions

Prepare the Dough (If Making from Scratch):

  1. Mix the Dough Ingredients: In a large bowl, combine flour and salt. Add softened butter and mix until crumbly.
  2. Add the Egg & Water: Add the egg and warm water, kneading until a smooth dough forms.
  3. Chill the Dough: Wrap in plastic and refrigerate for at least 30 minutes.

Prepare the Filling:

  1. Sauté the Vegetables: In a skillet, heat olive oil over medium heat. Add chopped onions and bell peppers. Cook until softened.
  2. Cook the Meat: Add ground beef or shredded chicken. Stir in cumin, paprika, oregano, salt, and pepper. Cook until browned and well-seasoned.
  3. Add Olives & Eggs: Stir in chopped boiled eggs and olives. Remove from heat and let cool.

Assemble the Empanadas:

  1. Roll Out the Dough: On a floured surface, roll out the dough and cut into circles (about 5 inches in diameter).
  2. Fill the Empanadas: Place 1-2 tablespoons of filling in the center of each dough circle.
  3. Seal the Edges: Fold in half and press the edges with a fork or twist them to create a decorative seal.

Bake the Empanadas:

  1. Preheat the Oven: Set oven to 375°F (190°C).
  2. Brush with Egg Wash: Lightly brush each empanada with the beaten egg for a golden crust.
  3. Bake: Place empanadas on a lined baking sheet and bake for 25-30 minutes or until golden brown.

Serve and Enjoy:

  1. Cool Slightly: Let them rest for a few minutes before serving.
  2. Enjoy Warm: Serve with chimichurri sauce, salsa, or a fresh salad.
